Fructooligosaccharides (FOSs) are fructans consisting of a sucrose molecule linked by a chain of 3–10 fructosyl units. FOSs are oligomeric linear fructans with β-(2-1) or β-(2-6) fructosyl-fructose linkages. The first monomer of the chain is either a α-d-glucopyranosyl or a β-d-fructopyranosyl residue. The degree of polymerization (DP) of FOSs is 2–10. Fructooligosaccharides (FOSs) are indigestible, highly fermentable CHO that occur naturally in foods such as onions, bananas, tomatoes, garlic, and wheat. Fructooligosaccharides (FOSs) powder can also be produced commercially and have been added to many food products and nutriceuticals. FOSs pass through the intestinal tract undigested and are fermented in the large intestine by bacteria into lactate and short-chain fatty acids. The short-chain fatty acids produced by FOS powder fermentation ultimately yield 1–2 kcal/g of digestible carbohydrates.
