Fructooligosaccharide (FOS) is present naturally in fruits, vegetables, and cereals, and as reserve material in onion, chicory, asparagus, garlic, tomatoes, wheat, etc. It is also termed as inulin, fructan, glucofructan, and oligofructan [37]. Inulin is also identified as polydispersed fructan, but is does not primarily have β-(2-1) glycosidic bond. It contains degree of monomeric polymerization of 2–60. Inulin is processed by the enzyme inulinase and produces Fructooligosaccharide (FOS) with a degree of polymerization of 2–10 (generally 5). This type of Fructooligosaccharide (FOS) is also called a short-chain Fructooligosaccharide (FOS). Shandong Bailong's Fructooligosaccharide (FOS) is synthesized using sucrose as a substrate through a process termed transfructosylation.
